Pollo a la Brasa

All Peruvians (inhabitants of Peru) at some time in their life have tried the delicious grilled chicken called ‘Pollo a la Brasa’ and it is common to take a good opportunity to enjoy this dish, however, not many know about its origin and why it has a special date to celebrate it. This distinctly Peruvian dish has its origin in the town of Santa Clara (Chaclacayo) located in the district of Ate around 1950. In the beginning, it was consumed by the upper classes, but progressively it became more massive. The original version consisted of chicken cooked over charcoal embers and marinated only with salt, served with French fries, and eaten directly with the hands, without cutlery. Its popularity increased from the 1970s on. Over time, the cooking varieties and flavors have changed for all tastes, making this dish a constant craving in Peru and the rest of the world.

When is celebrated?

The celebration of Pollo a la Brasa’s Day in Peru has been going on for ten years now and is recognized by ministerial resolution 0441-2010-AG, the date of which is every third Sunday in July.

This famous and delicious dish goes with a drink called ‘Inca kola’ or the famous 'Chicha Morada (purple corn).

Something that is very surprising about ‘Pollo a la Brasa’ is that you can eat it at any time of the day and in any type of weather, whether it is hot or cold.
